Indulge An Old Woman!

Once upon a time I was a pretty good cook. I actually enjoyed fixing big meals for my family and after my babies left home I still gladly cooked for the idiot.



Skip years ahead to the present and my cooking habits are nothing to write about even on my little site here. I have either forgotten how to cook a good meal or my taste buds have completely gone south along with everything else on me. Lucky for you I won't go into those unsightly changes tonight. Another time perhaps.

When I do indulge myself in my tiny kitchen and try to make some of my favorite meals the way they turn out seem like a night and day difference in the way I use to prepare them.

It's frustrating to the point where I have just about given up on cooking and eat a lot of sandwiches or a bowl of cereal.

What I have been wanting and can't seem to get it right is a big huge bowl of potato soup.  Is there a secret to making a great potato soup and do you know what it is? Would love to hear how you make yours

Now I am going into blogger and see if I can change my settings where you can reply to me by email because I have had several friends tell me I don't have that activated so let me see if I can figure it out.

I'm with you, Maggie -- here I was going to do such great cooking once I had time in retirement and now...not so much and not so great. Can't understand it. I am going to tackle Thanksgiving dinner for some family members for the first time in three years and am a little anxious about how it will turn out (after so many years of cooking for all holidays). If I come across a great recipe for potato soup in my anxious cookbook readings anytime soon, I'll let you know.

I wish I had a good potato soup recipe because I would share it with you! I'm not that good at making it and therefore haven't even tried to make it in a few years. I will have to say that the best restaurant potato soup that I've had is at the Cracker Barrel. You might can try to find their mock recipe and try it. That's what I might do myself. Seems like every time I go there now and want their soup they don't have it.

I have a quick potato soup recipe and I love it..
Peel and cube about 4 large potatoes and chop 1 onion, place in medium saucepan and just cover with water, bring to boil, cook till potatoes are done...add in 1 can of undiluted cream of chicken soup, add a little water if needed...simmer for 10 minutes....Great Soup for one!....
Now, sometimes, I will add in some chopped fresh carrots and celery.....it's good either way....

I have a quick potato cheese soup recipe that I like a lot -- it has just a little 'kick' in the back of the throat that I find interesting and comforting.

Ingredients

4 cups chicken broth
4 cups peeled and cubed potatoes
1/4 cup minced onions
1/2 teaspoon seasoning salt
1/4 teaspoon white pepper
1/4 teaspoon ground red pepper
1 (8 ounce) packages cream cheese, cut into chunks

Directions

Combine broth, potatoes, onion, and spices.
Boil on medium heat until potatoes are tender.
Smash a few of the potatoes to release their starch for thickening. (I use an immersion blender and mush most of it)
Reduce to low heat.
Add cream cheese.
Heat, stirring frequently, until cheese melts.

I was never GOOD at potato soup but I agree with the others who said to google the faux recipe from Cracker Barrel..

Cooking for one just isnt as much fun and eating alone isnt either and since our MINDS control everything, even our taste buds, thats probably way food tastes different.

I did that full tutorial on Replying By Email, its on my sidebar. Hoping that might help you.

I LOVE potato soup but rarely eat it because I can't make it either :)

I don't make potato soup but I make chowder a lot especially on cold rainy days.

I make corn chowder, seafood chowder and clam chowder and they all have potatoes in them. I use a can of Campbell cream of mushroom and milk in my chowders instead of adding cream.
I never measure anything so the measurements are approximately and it's always good.

I've tried other brands but Campbell is the best one so far.

I've kinda adapted all my recipes to low fat or fat free versions. Stinkin' cholesterol...stinkin' Dr. Whitecoat!!! (I refuse to take any drugs...'kinda like my liver. Heeehehehe)

I cook up the 'taders and dice half of 'em. I throw the other half in the blender with some skim milk, a little salt, pepper. (now here is where ya can add all the flavor ya like...I add some turmeric (suppose to help the brain), some cayenne pepper, garlic...anything that floats your boat. The blended acts as the cream base for the soup without butter or heavy cream. This will work with any veggie...Corn Chowder anyone??? Cream of Broccoli Soup.

....and they taste goooood too!

Got the urge to cook sister??? I'm feedin' the 'choppin' crew who moved in the middle of last week. I'm up to my knees in slingin' grub to a bunch of hungry spittin' burly fellas and could use the help!!! It's chuchwagon style...ya know...outta the back of a pick~up in the middle of a sorghum field. Next...soybeans!

potato soup....isn't that about
cooking it slow and easy
till the potatoes are tender.
Somehow it's about the texture,
for me.
Anyway, everything can't be blooming in your garden
all at once.
Sometimes things go dormant
for long periods of time
only to flush out more bountiful
and beautiful than ever before!
Could be happening in your cooking
situation:)

When I'm in a hurry and want something hot, sometimes I cook potatoes and celery with salt in a pot, smash the potatoes just a little when they are soft and then add milk until it's soup like and finish with a little slurp of heavy cream. I add any fresh herbs I may have around and salt and lots of freshly ground black pepper...

I wish I could help you out with your cooking dilema. I have never experienced it at all. It is probably because I have always preferred eating at home to going out. That is why I still keep cooking, although I must admit that Dick helps me a lot and he is a pretty darned good cook himself. I also wish I had a good potato soup recipe, but with all my cooking, do you know, I have never made homemade potato soup. Actually, Dick tells me that sometimes he can't believe that I am from Idaho, because I have never been a potato enthusiast, and Idaho potatoes are supposed to be the very best. I know they used to produce quite a lot of them, but not in the railroad town that I was born in, good old Pocatello Idaho. It was one of the three biggest towns in Idaho, I don't think you could have called any of them cities when I lived there. We left for California when I was 16, so I haven't lived there for a very long time. I don't care for french fries, potato chips, or most any kind of potatoes for that matter. If I make them myself, I can eat mashed potatoes, or baked ones, but I don't do it very often, much to my sweet husbands dislike. He adores potatoes in any shape or form, and often fixes them for himself.

By the way, if you do find a good potato soup recipe, I would really like to have a copy. I would make Dick some potato soup as a surprise and he would love that!! I can eat potato soup, by the way, so would join him in eating it.

I just noticed that some of your blogging friends left recipes for you to try. Maybe I will wait until you try them to see if you find a winner, then I will try. Golly though, the one that gpc posted sounds pretty special. Maybe I will try that. It is so different and I love cream cheese.

Thanks for your comments about our Four Freshman trip. I wish you would join and come to the Convention in Fort Wayne, Indiana next year. I'll be you would love it.

I used to make potato soup but haven't in a long time. If I lived alone I wouldn't cook either! I do love to cook when I have a crowd to please. I'll look for my recipe and email it to you. I put bacon in it and I also use cream and chicken broth....now I'm thinking I might want to make some this weekend!
