I've had...You Chicken recipe sounds wonderful. I've had to change it a bit to make Dr. White coat happy. I line a bakin' sheet with parchment and spray it with a little Pam Olive oil. Dip the chicken (fish, pork chops etc.) in egg whites. I coat with 1/2 flour and 1/2 toasted Italian bread crumbs, season to taste. Once I place it on the bakin' sheet I give the top side a spray. Cook on bottom rack at 357 turnin' every 15 min. or so until golden brown. At the end I add a sprinkling pf paprika to add a nice color. I swear ya can't tell this from fried (except for the lack of grease.) Keeps my cholesterol down and Dr. White Coat happy. <br /><br />Girl I'm sure prayin' for you. That back thing has gone on long enough!!! Kinda like my shingles! Oh...we're a mess aren't we???
